Home kill & producer butchery
Oly is available to provide butchery services to local producers. If you farm and want a home kill, or you need cutting for meat you're selling, tell him the animal and where you are.
Home kill
For animals you want butchered for your own household. That meat is for you to eat. It isn't for sale.
Producers
If the meat is going on to your own customers, say so. Oly will tell you what he can take on.

Butchery courses
Oly teaches people to butcher. There isn't a fixed timetable on this site. Tell him whether it's just you or a small group, and what you want to get better at. He'll come back with a date and a price.
What a day is like
Hands-on. Knives, a carcass or a joint, and the cuts you actually want to learn. He'll say what to wear and what to bring once the day is set. If anyone young is coming, put their ages in the note.
